Chingudi malai (ଚିଙ୍ଗୁଡ଼ି ମାଲାଇ) is prawns (chingudi) simmered in coconut milk with whole spices — a rich dish for special meals in coastal Odisha. The best-documented version of the dish is Bengal's chingri malai curry, and we have found no separate written history of an Odia origin, so it is fairest to call it a dish shared along the eastern coast and cooked in Odia homes.
Prawns from Chilika and the coast are prized in Odisha. For a more distinctly Odia preparation, the same prawns are cooked in a mustard-paste gravy as chingudi besara (see machha besara).
