Dahi baigana (ଦହି ବାଇଗଣ) — "curd brinjal" — is a mildly sour, cooling side dish of fried brinjal in tempered yoghurt. It is made especially for festivals, when it is cooked without onion or garlic, and is a familiar part of a festive Odia thali alongside dalma and rice.

What makes it Odia

The brinjal is first coated in turmeric and chilli and fried in mustard oil, and the yoghurt is tempered with panch phutana — the five-spice mix of mustard, cumin, fenugreek, fennel and nigella used throughout Odia cooking. A pinch of sugar balances the sourness of the curd.
